Olive oil helps maintain good cholesterol levels because it is an important source of HDL "Good" Cholesterol while at the same time Polyphenols reduce the oxidation of LDL "Bad" Cholesterol that causes Plaque. Plaque clogs the arteries and restricts blood flow to the heart and brain, causing heart attacks and strokes.

HEART DESEASES

Recent research has shown that olive oils high in Polyphenols have a protective effect against certain malignancies (breast, prostate, endometrium, digestive system and more). It is not clear what the direct relationship is, but olive oils with higher Polyphenols performed better in the studies.
